Baked Lemon Herb Salmon
Ingredients:
4 salmon fillets
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and pepper to taste
Instructions:
Preheat oven to 375°F (190°C).
In a small bowl, mix olive oil, minced garlic, lemon juice, thyme, parsley, salt, and pepper.
Place salmon fillets on a baking sheet lined with parchment paper.
Brush the herb mixture over the salmon.
Bake for 12-15 minutes or until salmon is cooked through and flakes easily with a fork.
Serve with your favorite AIP-friendly side dishes.
Side Dish:
Roasted Sweet Potatoes
Toss sweet potato cubes with olive oil, salt, and pepper.
Roast in the oven at 400°F (200°C) for 25-30 minutes until tender and slightly caramelized.
