Baked Lemon Herb Salmon



Ingredients:

  • 4 salmon fillets

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon dried thyme

  • 1 teaspoon dried parsley

  • Salt and pepper to taste


Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a small bowl, mix olive oil, minced garlic, lemon juice, thyme, parsley, salt, and pepper.

  3. Place salmon fillets on a baking sheet lined with parchment paper.

  4. Brush the herb mixture over the salmon.

  5. Bake for 12-15 minutes or until salmon is cooked through and flakes easily with a fork.

  6. Serve with your favorite AIP-friendly side dishes.



Side Dish:

Roasted Sweet Potatoes

  • Toss sweet potato cubes with olive oil, salt, and pepper.

  • Roast in the oven at 400°F (200°C) for 25-30 minutes until tender and slightly caramelized.
