Citrus Baked Salmon
Ingredients:
4 salmon fillets
Zest of 1 lemon
Zest of 1 orange
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
Salt and pepper to taste
Instructions:
Preheat oven to 375°F (190°C).
In a small bowl, mix together lemon zest, orange zest, lemon juice, orange juice, minced garlic, chopped parsley, salt, and pepper.
Place salmon fillets on a baking sheet lined with parchment paper.
Pour the citrus mixture over the salmon.
Bake for 12-15 minutes or until salmon is cooked through and flakes easily with a fork.
Serve hot with a side of roasted sweet potatoes or steamed vegetables.
Side Dish:
Mixed Green Salad
Toss mixed greens with sliced cucumber, cherry tomatoes, and avocado.
Drizzle with a simple dressing made from olive oil, lemon juice, salt, and pepper.
