Citrus Baked Salmon


Ingredients:

  • 4 salmon fillets

  • Zest of 1 lemon

  • Zest of 1 orange

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons fresh orange juice

  • 2 cloves garlic, minced

  • 2 tablespoons chopped fresh parsley

  • Salt and pepper to taste


Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a small bowl, mix together lemon zest, orange zest, lemon juice, orange juice, minced garlic, chopped parsley, salt, and pepper.

  3. Place salmon fillets on a baking sheet lined with parchment paper.

  4. Pour the citrus mixture over the salmon.

  5. Bake for 12-15 minutes or until salmon is cooked through and flakes easily with a fork.

  6. Serve hot with a side of roasted sweet potatoes or steamed vegetables.


Side Dish:

Mixed Green Salad

  • Toss mixed greens with sliced cucumber, cherry tomatoes, and avocado.

  • Drizzle with a simple dressing made from olive oil, lemon juice, salt, and pepper.
