Mango Chicken Salad
Ingredients:
2 cups Cooked Chicken, shredded or diced
1 ripe Mango diced
1/4 cup Chopped Red Bell pepper
1/4 cup chopped Red Onion
1/4 cup chopped Fresh Cilantro
Juice of 1 Lime
2 tbsp Olive oil
Salt and pepper to taste
Serve on a bed of Spring Lettuce
Instructions:
In a large mixing bowl, combine the cooked chicken, diced mango, chopped red bell pepper, chopped red onion, and chopped cilantro.
In a separate small bowl, whisk together lime juice, olive oil, salt, and pepper to make the dressing.
Pour the dressing over the salad and toss gently to combine.
Adjust the seasoning if needed.
Serve chilled as a delicious and protein-packed salad option.
